Kimchi, 24 hours old

seems to be doing well, Caitrin says it’s a bit spicy. I haven’t tasted it yet.

    Day 3(?), it still tastes “sharp” to me. Hopefully the flavors will blend more over time. Still quite spicy, of course, but not unpleasantly so.
